The Culture Behind the Flavor
Casa Salvaje puts a modern spin on Colombian cooking without losing the thread – the bandeja paisa is still enormous and the cazuela de mariscos (coconut-milk seafood stew) still arrives bubbling. Arepas and patacones show up as bases for everything from pulled pork to garlic shrimp. The room is small and dim with a proper bar, and it fills up on weekend nights. Reservations are a good idea Friday and Saturday.
