The Culture Behind the Flavor
Mambo began as a Cuban food truck and eventually landed a permanent spot in downtown Provo. The pressed Cuban sandwich, the ropa vieja, and roast lechón with moros y cristianos (black beans and rice) are its signature plates. Tostones and croquetas make good openers to share. It’s only open a few days a week, so check the hours before you drive over.
