The Culture Behind the Flavor
The name states the priority: pork shaved off a vertical trompo, caught with a slice of pineapple, folded into a small corn tortilla. Order half a dozen and a horchata. Service runs out of a permanently parked truck with outdoor seating, casual and quick. Closed Sundays, with an extra hour Friday and Saturday. Bring a jacket in cold months, since there is no indoor dining room.
